This casserole is a delicious and comforting meal perfect for breastfeeding mothers. Packed with sweet potatoes, spinach, and creamy cottage cheese, it provides essential nutrients like beta-carotene, iron, calcium, and healthy fats. Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 cups fresh spinach, chopped
  • 1/2 cup chopped onions
  • 2 garlic cloves, minced
  • 3 eggs
  • 1 cup cottage cheese (or ricotta)
  • 1/2 cup shredded mozzarella or cheddar
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions
