This isn’t your average mac & cheese. It’s a protein-rich, postpartum recovery version that combines creamy comfort with healing ingredients. With hidden veggies, added protein, and a smooth texture that soothes digestion, it’s ideal for new moms who need warmth, energy, and nourishment without compromise on taste.

Ingredients

  • 2 cups whole grain elbow pasta or gluten-free alternative
  • 1 ½ cups shredded sharp cheddar cheese
  • 1/2 cup cottage cheese (for added protein)
  • 1/2 cup pureed butternut squash (optional for extra nutrients)
  • 1 tbsp unsalted butter
  • 1 tbsp whole wheat or oat flour
  • 1 ½ cups milk (or oat milk)
  • 1 scoop unflavored collagen peptides or protein powder
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a medium saucepan, melt butter over medium heat. Stir in flour to form a roux.
  3. Slowly whisk in the milk and cook for 3–5 minutes until slightly thickened.
  4. Stir in cheddar cheese, cottage cheese, and butternut squash until creamy.
  5. Add collagen powder, seasonings, and mix until well blended.
  6. Fold in the cooked pasta, stir gently, and cook for another 2 minutes.
  7. Serve warm. Can be stored in the fridge for up to 3 days.

Why It’s Great for Postpartum Moms

This recipe provides protein for tissue repair, calcium for bone strength, and carbs for energy. Butternut squash adds beta-carotene, while cottage cheese offers a creamy texture with bonus protein. It’s comforting and easy on digestion, ideal for days when your body needs extra care.

Tips & Variations

  • Make it richer: Add a spoon of cream cheese or Greek yogurt.
  • Want a crunchy topping? Sprinkle with crushed whole grain crackers before serving.
  • Dairy-free? Use nutritional yeast and plant-based cheese alternatives.
